Honeydew Bubble Tea
This popular drink was invented in Taiwan, but you’ll soon learn why it’s become a worldwide sensation!
Serves 2-4
Ingredients
- 2 honeydew melons
- 1 cup black tapioca pearls
- 4 jasmine green tea bags
- 10 cups boiling water
- 2 cups ice
- Sweetener (if desired)
Instructions
Bring water to boil on stove, in large saucepan, over high heat. Carefully pour 1 cup of tapioca pearls into water, then gently stir. Boil for 3-4 minutes until pearls plump and float to surface. Reduce heat to medium and place lid on saucepan. Simmer for an additional 5 minutes. Gently scoop tapioca pearls out of water and refrigerate to cool. Very carefully scoop out 2 cups of boiling water from saucepan and pour into pitcher. Discard remaining water. Place tea bags into pitcher with boiling water and let steep for 5 minutes. Add 1 cup of ice to mixture, and stir to cool. Remove tea bags and set aside. Set a large fine-mesh sieve over green tea pitcher. Cut melon into cubes, removing seeds and rinds and place in blender, pureeing until smooth. Pour melon puree through sieve, pressing on solids with a spatula. Discard melon solids. Add honey or other sweetener to pitcher if desired, then stir to combine. Scoop 1-2 Tbsp of cooled tapioca pearls into serving glasses. Top with melon blend and serve.
