Zesty Grilled Eggplant

A quick and delicious side dish – just slice, spice and grill!  These grilled rounds are excellent salad toppers or hoagie ingredients, as well.

Serves 4-6


  • 2 medium eggplants
  • 4 cloves garlic, finely chopped
  • 1 tsp. cumin powder
  • ½ tsp. smoked paprika
  • 1 lemon, juiced
  • 3 Tbsp. olive oil
  • Cilantro
  • Goat cheese


Heat charcoal or gas grill. In a small bowl, combine olive oil, garlic, paprika, cumin and lemon juice. Slice eggplants vertically in very thin slices with the skin on (¼”wide). Brush eggplant with olive oil mixture. Place on grill and cook on both sides until dark grill marks appear, brushing with extra olive oil if necessary. Remove and serve on large platter, garnished with fresh cilantro and goat cheese.
