Shaved Cantaloupe, Pistachio and Mint Salad

Sweet, tart, creamy and crunchy – this satisfying salad is sure to please!

Serves 2-4


  • 1 cantaloupe
  • ½ red onion
  • ½ cup vinegar
  • 2 Tbsp sugar
  • ½ cup water
  • Crumbled feta
  • ½ cup hulled pistachio nuts

Creamy Mint Dressing

  • 1/3 cup greek yogurt
  • 1 oz cream cheese
  • 1 clove garlic
  • Juice from ½ lime
  • 10-20 mint leaves
  • Salt & Pepper


Thinly slice red onion into half-circles. Combine vinegar, water, sugar and salt into small container. Stir until sugar dissolves. Add onion, and cover with liquid adding more water if necessary so that all of the onions are covered. Set aside for at least an hour.

Using blender, combine dressing ingredients and pulse until mint has broken up, but mixture has not turned green. Using mandolin or peeler, cut cantaloupe into no thicker than 1/8 thick slices. Arrange cantaloupe slices, pickled red onion, feta and pistachio nuts onto serving dish. Serve with creamy mint dressing.
